Slow Cooker Shawarma Style Chicken Kebab Bowls

With an average temperature of 16 degrees for the past few days and winter turning on its’ iciest winds, my woolliest, bobbliest jumpers are doing little to fend off the shivers this week!

This afternoon I needed warming from the inside out and so set about returning our lovely retro Slow Cooker to its’ seasonally rightful place on our kitchen counter.  With an abundance of iceberg lettuce languishing in our crisper, and with few foods being more comforting than a kebab, I felt inspired to try my hand at a low carb, fuss-free stand-in for the greasy chip-shop delicacy, and this is what I came up with.

Slow Cooker Shawarma Style Chicken

Slow Cooker Shawarma Style Chicken

  • 600g chicken thighs
  • 3 tablespoons of light olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon allspice
  • 1 teaspoon mild curry powder
  • 3 cloves garlic, minced
  • 3 dried chillies
  • 2 cinnamon sticks
  • Generous pinch of sumac
  • Salt and black pepper
  • 5 tablespoons sour cream
  • 3 cloves garlic, minced
  • 5 cups iceberg lettuce, chopped
  • 1/4 cup lemon juice

  1. Place the chicken thighs in a wide bowl or small baking dish.
  2. Dust the chicken with the cumin, smoked paprika, allspice and curry powder. Pour in the olive oil and stir to coat. Tip the seasoned chicken into the bowl of the slow cooker and add the minced garlic, dried chillies, and cinnamon sticks. Sprinkle in the sumac, salt and pepper and pop the lid on.
  3. Set the slow cooker to low and cook for 7 hours. If you’re a little more of a hurry set the slow cooker to high and cook for 4 hours.
  4. Place the sour cream and remaining cloves of minced garlic into a small bowl and stir to combine.
  5. Use a slotted spoon to scoop the cooked chicken out of the slow cooker and arrange on paper towels to absorb the excess oil and cooking juices.
  6. Pour lemon juice over iceberg lettuce and toss to combine.
  7. To assemble the kebab bowls, arrange iceberg lettuce over the bottoms of the serving bowls. Top with the Shawarma Style Chicken and a hefty dollop of of the garlic infused sour cream.

This recipe makes 5 servings.
